Resumen : El siguiente trabajo se realizó con el objetivo de establecer la concentración de aceite esencial de tomillo (EAT) para alargar la vida útil del queso fresco artesanal, se elaboró el queso en Agroindustrias la Marimba en la ciudad de Quinindé a partir de leche bovina entera y se utilizó un diseño uní factorial, el factor fue el % de AET el cual se adicionó en 3 niveles (0,1–0,2 y 0,3%) con 3 réplicas. A los quesos se les determinó acidez, humedad y grasa, dureza dentro del análisis de perfil de textura (TPA), Staphylococcus aureus según norma INEN 1529-14 y análisis sensorial; estadísticamente las variables TPA, humedad, acidez y grasa tienen normalidad, la variable de firmeza no se comportó homogéneamente mientras que las otras variables humedad y acidez con una sig p>0,05 indica que se comportan homogéneamente. Al determinar el tiempo de vida útil del queso, considerando el pH, el nivel de 0,3% de AET alcanza mayor tiempo de conservación (6,03 días), aunque no hubo diferencias estadísticas entre las variantes. En el análisis sensorial, el queso con nivel bajo de AET (0,1%) tuvo mayor aceptación en los atributos de olor y sabor (3,61 y 3,99 puntos respectivamente); en cambio en el parámetro de textura la mejor respuesta (3,80 puntos) se consiguió con el nivel más alto de AET (0,3%). Por lo tanto, se concluye que desde el punto de vista sensorial no se debería adicionar AET para la elaboración de quesos que sean expendidos comercialmente.
Descripción : The following work was carried out with the objective of establishing the concentration of thyme essential oil (EAT) to extend the shelf life of artisanal fresh cheese, the cheese was made in Agroindustrias la Marimba in the city of Quinindé from bovine milk Whole and a unial factorial design was designed, the factor was the% of AET which was added in 3 levels (0.1–0.2 and 0.3%) with 3 replicates. When determining the shelf life of the cheese, determining the pH, the level of 0.3% AET reaches a longer shelf life (6.03 days), although there were no statistical differences between the variants. In the sensory analysis, cheese with low AET level (0.1%) had greater acceptance in the attributes of smell and taste (3.61 and 3.99 points respectively); on the other hand, in the texture parameter the best response (3.80 points) was changed with the highest level of AET (0.3%). Therefore, it is concluded that from the sensory point of view, AET should not be added for the elaboration of questions that are commercial expenses.
