dc.descriptionThe objective of the present investigation was to evaluate the application of enzymatic solutions of the red pitahaya husk to improve the texture of bovine meat in high tenderness cut. The proteolytic enzyme concentrate was extracted, partially purified and dried to make the physicochemical characterization in pH, humidity, protein and enzymatic activity. The enzymes obtained were applied at different concentrations in water 14; 28 and 42 g / L corresponding to factor A, and the time per immersion of the meat for 1 and 2 hours belonging to factor B, resulting in six treatments. For the essay, the Design was completely Randomized plus a witness in three replicas. The experimental unit was the over-rib cutting into uniform pieces of 20 to 25 g. The Meat Texture Profile (TPA) was determined for the meat and an economic estimate was made of all treatments. According to the results, the concentrate with proteolytic enzymes presented 7,78 pH; 11,98% humidity; 7,81% protein and enzymatic activity of 1,386 mol/m3. The variables TPA in the cut of meat managed to establish that the best treatment was the 42 g enzymatic concentration and two hours of immersion, this with an estimated cost of $ 13,37.es_ES
dc.description.abstractEl objetivo de la presente investigación fue evaluar la aplicación de soluciones enzimáticas de la cáscara de la pitahaya roja para mejorar la textura de la carne bovina en corte de alta terneza. El concentrado de enzimas proteolíticas se lo extrajo, purificó parcialmente y se secó para hacer la caracterización fisicoquímica en pH, humedad, proteína y actividad enzimática. Las enzimas obtenidas se aplicaron a diferentes concentraciones en agua 14; 28 y 42 g/L que corresponde al factor A, y el tiempo por inmersión de la carne por 1 y 2 horas que pertenecen al factor B, dando como resultado seis tratamientos. Para el ensayo se empleó el Diseño Completamente al Azar más un testigo en tres réplicas. La unidad experimental fue el corte sobrecostillar en trozos uniformes de 20 a 25 g. A la carne se le determinó el Perfil de Textura Alimentos (TPA) y se realizó una estimación económica de todos los tratamientos. De acuerdo con los resultados el concentrado con enzimas proteolíticas presentó 7,78 de pH; 11,98% de humedad; 7,81% de proteína y actividad enzimática de 1,386 mol/m3s. Las variables TPA en el corte de carne lograron establecer que el mejor tratamiento fue el 42 g concentración enzimática y dos horas de inmersión, éste con un costo estimado de $13,37.es_ES
