Abstract
La presente investigación tiene como objetivo evaluar el tiempo y porcentaje de dos extractos enzimáticos naturales “bromelina y papaína” como ablandador de músculo vacuno. Se evaluó tiempo (6, 8 y 10 horas) y porcentaje de adición de cada extracto enzimático (30% y 50%). Se utilizaron 12 tratamientos con 3 réplicas, tomando como unidad experimental 50 g de músculo vacuno, donde se manipularon el porcentaje de adición de cada extracto enzimático (30 y 50%) y el de tiempo (6, 8 y 10 horas) de acción, la aplicación de cada extracto se realizó por inmersión. Se evaluaron los parámetros del perfil de textura (dureza, elasticidad, cohesividad, gomosidad y masticabilidad)a través del método destructivo (punción-penetración) haciendo uso del Texturómetro. El diseño estadístico utilizado fue DCA (diseño completamente al azar) con arreglo trifactorial A*B*C más un testigo. A través de las pruebas de Dunnett se logró identificar al mejor tratamiento, siendo este el T10 (50% extracto de bromelina 10 horas) el cual mostró el mejor perfil de textura.
Description
This research aims to evaluate the time and percentage of two natural enzyme extracts "bromelain and papain" as a beef muscle softener. Time (6, 8 and 10 hours) and percentage of addition of each enzyme extract (30% and 50%) were evaluated. 12 treatments were used with 3 replicates, taking as an experimental unit 50g of cattle muscle, where the percentage of addition of each enzyme extract (30 and 50%) were manipulated. and the time (6, 8 and 10 hours) of action, the application of each extract was done by immersion. Texture profile parameters (hardness, elasticity, cohesivity, gummyness and chewability) were evaluated through the destructive method (puncture-penetration) using the Texturometer. The statistical design used was DCA (completely random design) with A*B*C trifactorial arrangement plus a witness. Dunnett's tests were able to identify the best treatment, with this being T10 (50% bromelain extract*10 hours) which showed the best texture profile.
