Resumen : El objetivo de esta investigación consistió en determinar el Tiempo (A) y Temperatura (B) de deshidratación de la remolacha (Beta Vulgaris) en dependencia de las características físico-químicas del edulcorante de dicho vegetal. Con la finalidad de obtener un mayor rendimiento del edulcorante como una alternativa en la industria alimentaria, se comparó sensorialmente el efecto edulcorante en un néctar de mora endulzado con el azúcar de remolacha (sacarosa) y con uno comercial (azúcar morena), se elaboraron los costos de producción. En el proceso de la investigación se empleó un diseño completamente al Azar (DCA) bifactorial A x B, con 12 repeticiones midiendo los Grados Brix (°Bx), la Humedad (%H), el Rendimiento (g de remolacha /g de edulcorante en bruto) y la Evaluación Sensorial. Estadísticamente sí existió diferencia significativa en el atributo grados Brix en el Análisis De Varianza (ADEVA) con un p-valor de 0.05 y la evaluación sensorial en el que se estableció al tratamiento 4 (T4) con una media de 48.483 según el SPSS como el de mejor aceptación en la categoría de ¨muy dulce¨ indicado por los jueces en la catación, ya que tuvo mayor intensidad que los otros tratamientos afectados por el factor A y B, esto hizo que aumentaran más los azúcares de la pulpa de remolacha provocando diferentes intensidades de dulzor.
Descripción : The objective of this investigation consisted in determining the Time (A) and the Temperature (B) of dehydration of the beet (Beta Vulgaris) in the dependence of the physical-chemical characteristics of the sweetener of said vegetable. In order to obtain a higher sweetening performance as an alternative in the food industry, the sweetening effect was compared with a mule sweetened with sugar beet (sucrose) and with a commercial one (brown sugar), the production costs were elaborated . In the research process, a completely randomized design (DCA) was used A x B, with 12 repetitions measuring the Brix Degrees (° Bx), the Humidity (% H), the Yield (g of beet / g of sweetener) raw) and the Sensory Evaluation. Statistically yes there was a significant difference in the Brix degrees in the Analysis of Variance (ADEVA) with a value of 0.05 and the sensory evaluation in which treatment 4 (T4) is treated with an average of 48,483 according to the SPSS as the best acceptance in the ¨very sweet¨ category indicated by the judges in the tasting, and that had greater intensity than in the other treatments, in the factors A and B, this caused that the sugars of the beet pulp increased more causing different intensities of sweetness.
