Resumen:
La presente investigación se ejecutó en las Unidades de Docencia, Investigación y Vinculación de la Carrera de Agroindustria de la Escuela Superior Politécnica Agropecuaria de Manabí, Manuel Félix López, la cual cuenta con cuatro Talleres Agroindustriales, que son: Cárnicos; Frutas y Vegetales; Harinas y Balanceados; y Lácteos, se encuentra ubicada en el Cantón Bolívar, provincia de Manabí. Su desarrollo duró ocho meses, períodos en los que se realizó el Manual de Seguridad y Salud del Trabajo para los Talleres Agroindustriales antes mencionados. Se efectuó la investigación descriptiva, de campo y bibliográfica, las cuales sirvieron de apoyo en la presente investigación. Los métodos deductivo-inductivo y analítico-sintético, permitieron analizar las actividades de los procesos para identificar sus respectivos riesgos. Se utilizó el método de la observación para conocer el ambiente de trabajo de las diferentes áreas. Se aplicó una entrevista a los técnicos encargados. En la primera etapa, se realizó la definición de los procesos, los cuales se representaron gráficamente, utilizando la simbología ASME, para facilitar su comprensión. En la segunda etapa se elaboró la Matriz de Riesgos por puesto de Trabajo, establecida por el Ministerio de Trabajo del Ecuador, para la determinación y análisis de los riesgos laborales a los que se encuentran expuestos los trabajadores en su labor diaria. Con base en los elementos antes señalados se procedió a elaborar el Manual de Seguridad y Salud del Trabajo respectivo, para que las personas que hacen uso de los talleres tengan conocimiento de los riesgos presentes en los procesos, resultando posible prevenirlos o mitigarlos.

This present research was carried out in the Units of Teaching, Research and engagement in the School of Agro-Industry at Escuela Superior Politécnica Agropecuaria de Manabí, Manuel Félix López, which has four agro-industrial workshops, namely Meat; Fruits and vegetables; Flour and balanced meals; and Dairy Products, it is located in Bolívar Canton in the province of Manabí. Its development lasted eight months, period in which the Occupational Safety and Health Manual for the aforementioned agro-industrial workshops took place. There was made a descriptive, a field and a literature research, which served as support. Deductive-inductive and analytic-synthetic methods allowed to analyze the process of activities to identify their respective risks. The observation method was used to determine the work environment in different areas. An interview was applied to the technicians in charge. In the first stage, a definition of processes was performed, and then represented graphically using the ASME symbology in order to facilitate understanding. In the second stage, the risk matrix was prepared according to the working place, established by the Ministry of Labour in Ecuador for the identification and analysis of occupational hazards workers are exposed to in their daily work. Based on the aforementioned elements it was proceeded to develop the occupational Safety and Health Manual for people who use the workshops, so that they are aware of the risks immersed in the process, turning out possibly to mitigate them.
